Sensory Dissection
Flavor
Huang Guan Yin
Huang Guan Yin is a modern Anxi cultivar (a cross of Tie Guan Yin and Huang Jin Gui) that combines Tie Guan Yin's signature floral-creamy character with a brighter, fruitier edge. The rolled green balls brew a golden cup with orchid florals, ripe stone fruit, and a silky, honeyed finish. It is often more aromatic and a touch sweeter than classic Tie Guan Yin, at a generally lower price.
Mao Xie
Mao Xie ('hairy crab') is a classic Anxi oolong named for the fine downy hairs on its leaf edges. Rolled into tight green balls like Tie Guan Yin, it brews a bright, fragrant cup with orchid florals, a fresh green edge, and a crisp, slightly tart finish. Compared to Tie Guan Yin it is generally more rustic and a touch more astringent, with a lively character that stands up well to shorter steeps.
