Sensory Dissection
Flavor
Bancha
Bancha is Japan's everyday green tea, picked from mature leaves later in the season. The cup is straightforward and easygoing: mild grassy flavor, light body, and a faint roasted edge. Caffeine is low, so it is often enjoyed throughout the day, including evenings. It is forgiving to brew and a good introduction to Japanese green teas for those who find sencha too intense.
Kukicha
Kukicha, or twig tea, is made mostly from stems and stalks separated during sencha production. The cup is smooth and mild with a gentle vegetal sweetness, a hint of marine depth, and very little bitterness. Its caffeine level is among the lowest of Japanese teas. Kukicha is easy to drink at any time of day and handles longer steeps without turning harsh.
