Sensory Dissection
Flavor
Darjeeling
Darjeeling grows high in the Himalayan foothills and is often called the 'champagne of teas.' First flush (spring) lots are light, bright, and floral with a distinctive muscatel grape note; second flush adds ripe fruit and spice. The body is lighter than Assam, with a brisk, clean finish. It is best enjoyed without milk to appreciate its aroma.
Earl Grey
Earl Grey is black tea scented with bergamot oil, giving a bright, perfumed citrus note over a malty base. The bergamot adds an aromatic lift that makes the cup taste lighter than its base tea suggests. Quality varies widely: good versions balance real citrus fragrance with a smooth black body rather than masking it. Traditionally taken without milk.
